Amgalan Chin 的景迈古茶林之旅

2023年三月,Amgalan Chin 前往云南南部的景迈山,被其获 UNESCO 认可的古茶林以及老树 sheng 的独特风格所吸引。对 Amgalan — 这位成长于俄罗斯商队传统和蒙古砖茶环境的跨区域茶专家 — 景迈代表着超越国界的风土与传统之谜。与他结识多年的哈尼族家庭合作下,Amgalan 花了数日漫步于雾气缭绕的山坡,挑选那些在樟树和野竹林遮荫下,100–200年树龄的茶树无农药生长的片区。春采头批在四月初手工采摘,此时叶片油脂丰厚、气候干燥,有利于理想的日光晒青。当天家人便进行初制:细心萎凋、快速炒青以停止氧化、手工揉捻,然后摊放在竹筛上于云南阳光下日晒。制成的毛茶在一个小型家庭作坊中轻微石磨压制成357克饼茶,保留了 Amgalan 所珍视的细腻质感,适合陈化。他将这款2023年饼茶视为一片纯净风土在完美春天能量瞬间的快照 — 一款将在家中茶仓中优雅转化的茶。Amgalan 将饼茶存放于昆明一个干净、干燥的仓库中直到可出货,并监控其转化,作为他研究不同仓储气候对 sheng 转化影响的一部分。对他而言,这款茶既是当下美味的一杯,也是未来数十年的承诺。
