Amgalan Chin 的景邁古茶林之旅

2023年三月,Amgalan Chin 前往雲南南部的景邁山,被其獲 UNESCO 認可的古茶林以及老樹 sheng 的獨特風格所吸引。對 Amgalan — 這位成長於俄羅斯商隊傳統和蒙古磚茶環境的跨區域茶專家 — 景邁代表著超越國界的風土與傳統之謎。與他結識多年的哈尼族家庭合作下,Amgalan 花了數日漫步於霧氣繚繞的山坡,挑選那些在樟樹和野竹林遮蔭下,100–200年樹齡的茶樹無農藥生長的片區。春採頭批在四月初手工採摘,此時葉片油脂豐厚、氣候乾燥,有利於理想的日光曬青。當天家人便進行初製:細心萎凋、快速炒青以停止氧化、手工揉捻,然後攤放在竹篩上於雲南陽光下日晒。製成的毛茶在一個小型家庭作坊中輕微石磨壓製成357克餅茶,保留了 Amgalan 所珍視的細膩質感,適合陳化。他將這款2023年餅茶視為一片純淨風土在完美春天能量瞬間的快照 — 一款將在家中茶倉中優雅轉化的茶。Amgalan 將餅茶存放於昆明一個乾淨、乾燥的倉庫中直到可出貨,並監控其轉化,作為他研究不同倉儲氣候對 sheng 轉化影響的一部分。對他而言,這款茶既是當下美味的一杯,也是未來數十年的承諾。
